Before fermentation, the juice undergoes precisely timed micro-oxygenation followed by natural, oxygen-free settling at low temperature, preserving maximum terroir character. The clear juice then goes into medium-toast French oak for 10 months, using a pre-oxidation technique that lends extra maturity and roundness. A slow, complete alcoholic fermentation is followed by a spontaneous malolactic conversion. The wine rests on fine lees in barrel until early the following summer, with only minimal racking.
