Terroir
Huailai sits near 40°N by the Guanting Reservoir, a temperate continental monsoon climate with wide diurnal swings and only ~400mm annual rainfall. Canaan Winery's vineyards span 498-1,050m; Riesling is planted mainly at 900-1,000m on sandy, gravelly soils that drain well, giving mineral character and taut acidity.

Winemaking
Hand-harvested and sorted, cold-pressed and cold-fermented in stainless steel to preserve fresh fruit and floral aromatics — no malolactic fermentation or oak aging, to let the variety's pure typicity and the region's high-altitude acidity lead.

High Cru Tasting Notes
From a vineyard at 1,000m, night-harvested and cold-settled. Pale lemon color; peach and candied citrus aromatics, high acidity, saline mineral character, clean and precise with lemon, citrus and white peach. A well-structured, easy-drinking style — among the most distinctly "Riesling" expressions of the variety made in China.
