Terroir
Fruit comes from Mihope's core Cabernet Gernischt plot in Yinchuan, at about 1,100 m on sandy alluvial soil that drains well. Under strong continental sunshine, late harvesting is used to avoid the grassy character Cabernet Gernischt can show and to develop ripe fruit aromas.

Winemaking
100% Cabernet Gernischt, a Carménère-descended variety that has developed its own distinct character in Ningxia's sunshine.

High Cru Tasting Notes
Bright garnet with a violet rim. Raspberry and red cherry lead into blackberry and cassis, lifted by mint and bay leaf. Full, round palate with bright acidity and fine, chewy tannins; long finish with a touch of restrained sweetness.

Food Pairing
Hand-pulled lamb — the wine's fruit and herbal lift brighten the meat's natural sweetness without covering it, while its acidity balances the fat.
