Terroir
Sits at the foot of Jiuding Mountain in Laixi, Qingdao — slightly warmer and drier than Penglai, with budbreak about a week earlier. Limestone-influenced soils and Yellow Sea maritime climate bring pronounced diurnal swings.

Winemaking
Red varieties picked early, at lower sugar and acid than full ripeness. Borrows Champagne's "Blanc de Noirs" technique — gentle pressing with brief or no skin contact to avoid extracting color and tannin, cool fermentation, alcohol deliberately kept low.

High Cru Tasting Notes
Bright pale yellow, fresh aromatics of ripe peach and apricot mingling with white blossom and a touch of sweet candy, a soft vanilla undertone beneath. Round, smooth entry shifting to fresher orange-peel notes with slight bitterness. Crisp, moderate acidity, clean and simple with a touch of savory salinity.
