Winemaking
Hand-picked and hand-sorted twice. Fermented at low temperature; 80% of the wine aged 9 months in 500L French oak, adding width and texture without masking the grape's natural character.
High Cru Tasting Notes
Bright, glowing gold. Ripe mango, jackfruit and apricot lead the nose, layered with honeysuckle and locust blossom, opening with air to a touch of honey and beeswax. The palate leads with acidity, not sweetness — Petit Manseng's natural high acid carries the residual sugar effortlessly, joined by salted preserved mango, candied citrus peel and a whisper of sea-salt minerality. Long finish of ripe mango, honey, blossom and saline freshness.
Food Pairing
Nostalgic layered pudding (大菜糖), golden fried water chestnut sticks — the wine's high acidity cuts through the fried richness while echoing the malt-sugar sweetness of the dessert.
