Winemaking
Hand-picked and hand-sorted twice, then direct-pressed and fermented at low temperature (14–16°C) in small stainless steel tanks to preserve fresh fruit character — no oak, no lees complexity.
High Cru Tasting Notes
Bright salmon pink. Clean, direct aromas of strawberry and raspberry lead, joined by grapefruit, white peach and a touch of fresh herb. Vibrant acidity, light body, juicy and easy to drink, with a crisp, clean finish. Built purely around freshness rather than complexity — the point is to wake up the palate, not to compete with the seafood that follows.
Serving Note
Poured as the opening wine before the meal — light enough to pair with a few cold appetizers or small bites without overpowering the seafood's natural sweetness to come.
