The fifth wine of the night — a Xinjiang Cabernet Sauvignon poured at full power, alongside our Ningxia red, for the roast lamb centrepiece.
Region: Tianshan Mountain North, Xinjiang, China | Grapes: Cabernet Sauvignon, Merlot | Vintage: 2021 | Style: Dry Red, Oaked
Winemaking
Hand-selected fruit, cold-soaked and barrel-aged for a ripe, structured style built to stand up to char and spice.
High Cru Tasting Notes
Medium garnet-red. Blackcurrant and black plum with dark chocolate, vanilla and a signature green pepper note. Rich, firm tannins with a gritty grip, black fruit and graphite through to a warm, spiced finish.
Food Pairing
Whole roast lamb, grilled lamb chops and skewers — the wine's weight and graphite, spiced notes connect directly with the char and cumin, while the lamb's fat softens the tannins.
Note: the Chinese label reads 惊殊; an official English cuvée name has not yet been confirmed, so "Jingshu" (pinyin) is used as a placeholder.
