Terroir
Grown in the Jinshan area of the Helan Mountain East foothills at 1,192 m, on gravelly calcareous soil mixed with sand. The site receives more than 3,000 hours of sunshine a year, lies right beside the Helan Mountain nature reserve, and is farmed without pesticides or herbicides.

Winemaking
Devo's third multi-vintage release, blending base wines from 2018–2020 with a secondary fermentation in bottle.

High Cru Tasting Notes
Pale gold with a faint blush. Green apple, pear and white blossom over sourdough and lees notes. High acid, fine soft mousse, with a distinct saline, mineral edge and a touch of sweetness on the finish.

Food Pairing
Sichuan-pepper chicken and Xinjiang mixed salad — the acidity and bubbles cut through the chilli oil, while the fruit softens the numbing spice.
