Devo's third multi-vintage release, blending base wines from 2018–2020 with a secondary fermentation in bottle.

High Cru Tasting Notes
Pale gold with a faint blush. Green apple, pear and white blossom over sourdough and lees notes. High acid, fine soft mousse, with a distinct saline, mineral edge and a touch of sweetness on the finish.

Food Pairing
Sichuan-pepper chicken and Xinjiang mixed salad — the acidity and bubbles cut through the chilli oil, while the fruit softens the numbing spice.
