Winemaking
Longting farms its own vineyard biodynamically, aiming for the purest possible expression of coastal terroir. Grapes are hand leaf-thinned and pass three rounds of selection — in the field, by cluster, and by berry — before low-temperature fermentation and light French oak ageing that adds structure without masking the fruit.
High Cru Tasting Notes
Bright pale straw-yellow. Clean aromas of jasmine, white and yellow peach lead, layered with kumquat and lemon peel plus a touch of ripe tropical fruit. Oak is used with restraint, contributing only a whisper of cream and toasted nut. Medium-full body with real freshness — the coastal terroir gives a distinct saline, mineral edge, juicy fruit and bright, lively acidity that keeps the palate taut. Long finish layering mineral, citrus and light cream.
Food Pairing
Crispy fried seafood rolls, salt-and-pepper fish bites — the wine's bright acidity cuts through the oil, while its coastal minerality echoes the natural sweetness of the fish rather than covering it.
