10 months in French oak. Hand bunch-selected, hand-destemmed, hand-crushed, fermented with native/wild yeast, aged 10 months in French oak, naturally clarified, then bottled.

High Cru Tasting Notes
Deep purple-red to dark cherry-red. Aromas are dominated by dark fruit, layered with mineral, herbal and black pepper notes. Rich and balanced on the palate, with bright acidity, generous flavour, clear minerality, and fine fermentation-derived aromatics — coherent structure with real depth.
