Winemaking
Fermented in open-top vats at around 28°C with 20 days of skin contact, then aged 1 month in old French oak before resting 12+ months in stainless steel prior to bottling — unfined and unfiltered throughout, to keep as much of the grape's natural character and texture as possible.

High Cru Tasting Notes
Medium ruby. Fresh red cherry, raspberry and wild strawberry lead, with dried flowers, forest floor and a light dusting of spice. A distinct coastal minerality and saline edge run through the wine, giving it real vibrancy. Medium body, juicy fruit, bright natural acidity and fine, soft tannin with no harsh edges — a cool-climate style that leans on freshness and terroir rather than oak or ripeness. Clean, mineral-driven finish with red berry and light spice.

Food Pairing
Steamed wild sea fish, slow-braised preserved-vegetable fish, shrimp-paste stir-fried greens — the wine's delicate tannin and coastal minerality echo the seafood rather than overpowering it, proving red wine and seafood can be a genuinely classic pairing.
