Winemaking
Riesling aged in amphora on its skins, trading the variety's usual purity for texture, tannin and savoury depth.

High Cru Tasting Notes
Cloudy amber-orange. Dried sour plum, tangerine peel and apricot over mineral and savoury, meaty notes. High acid throughout, with skin-contact tannin giving it a grip closer to a light red than a white.

Food Pairing
Stir-fried broccoli, spicy-sour potato strips and Dingding fried noodles — the wine's acidity and umami carry through to the last dish, without adding more weight to a palate already full of lamb and char.
